L Ecole Cabernet Sauvignon Columbia Valley 2021

Founded in 1983, LEcole 41 was a pioneer of the Washington wine scene being the third winery in the Walla Walla Valley. Their commitment to high quality and transparent wines that reflect their land is reflected in their commitment to sustainability and minimally intrusive winemaking. The LEcole 41 Columbia Valley Cabernet Sauvignon is sourced from vineyards throughout the region with whom the family has enjoyed long-term partnerships. The grapes are crushed in small lots and fermented in stainless steel before maturing in small French oak barrels, twenty five percent of which are new, for twenty two months. The wine is textbook Cabernet Sauvignon with dark fruit, herb, and spice with a structured backbone of integrated tannins. Enjoy with grilled ribeyes or rich, braised shortribs, and with bold cheeses like aged gouda or cheddar.
